How often should a small brand post?

The honest answer is: as often as you can keep up for a year.

There is no magic number. There is only the number you can keep up when it is raining and you have a delivery late.

Start smaller than you think

Two good posts a week beat seven rushed ones. Batch your filming, schedule ahead and leave space to reply.
